Hemp Caesar Salad

A creamy Caesar without raw eggs, anchovies, or cashews. Blended hemp hearts do all the work, with capers and Dijon carrying the salt and depth.

Hemp Caesar Salad

Yields 4 side or 2 main servings. Prep 15 minutes.

Dressing

  • 1/2 cup hemp hearts
  • 1/4 cup water
  • 3 tablespoons lemon juice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon capers (plus 1 teaspoon brine)
  • 2 cloves garlic
  • 3 tablespoons nutritional yeast or grated parmesan
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt, plenty of black pepper
  • Optional: 1 anchovy fillet for the traditional version

Salad

  • 2 heads romaine, washed and chopped
  • 1 1/2 cups sourdough croutons (cubed and toasted with olive oil)
  • 2 tablespoons hemp hearts
  • Shaved parmesan to finish

Method

  1. Blend dressing ingredients until completely smooth, 60 seconds. Thin with water if too thick.
  2. Toss romaine with dressing, croutons, and hemp hearts.
  3. Finish with shaved parmesan and a turn of pepper.
