A creamy Caesar without raw eggs, anchovies, or cashews. Blended hemp hearts do all the work, with capers and Dijon carrying the salt and depth.
Hemp Caesar Salad
Yields 4 side or 2 main servings. Prep 15 minutes.
Dressing
- 1/2 cup hemp hearts
- 1/4 cup water
- 3 tablespoons lemon juice
- 2 tablespoons Dijon mustard
- 1 tablespoon capers (plus 1 teaspoon brine)
- 2 cloves garlic
- 3 tablespoons nutritional yeast or grated parmesan
- 1 tablespoon olive oil
- 1/2 teaspoon salt, plenty of black pepper
- Optional: 1 anchovy fillet for the traditional version
Salad
- 2 heads romaine, washed and chopped
- 1 1/2 cups sourdough croutons (cubed and toasted with olive oil)
- 2 tablespoons hemp hearts
- Shaved parmesan to finish
Method
- Blend dressing ingredients until completely smooth, 60 seconds. Thin with water if too thick.
- Toss romaine with dressing, croutons, and hemp hearts.
- Finish with shaved parmesan and a turn of pepper.
