Hemp-crusted cauliflower wings that crisp in the oven without deep frying. The hemp adds protein and crunch; the buffalo sauce makes them dangerously snackable.
Hemp Buffalo Cauliflower Wings
Yields 4 servings. Prep 15 minutes. Bake 30 minutes.
Ingredients
Wings:
- 1 large head cauliflower, broken into florets
- 1/2 cup all-purpose flour
- 1/2 cup hemp hearts
- 1/2 cup panko breadcrumbs
- 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon salt
- 2/3 cup milk
- 2 tablespoons olive oil
Buffalo sauce:
- 1/3 cup hot sauce (Frank's RedHot or similar)
- 2 tablespoons melted butter
- 1 tablespoon maple syrup
- 1 teaspoon garlic powder
Method
- Heat oven to 220°C. Line a baking sheet with parchment.
- Whisk flour, half the hemp hearts, spices, salt, and milk into a smooth batter.
- In another bowl, mix remaining hemp hearts and panko.
- Dip each floret in batter, then roll in hemp-panko coating. Place on baking sheet.
- Drizzle with olive oil. Bake 20 minutes.
- Whisk buffalo sauce ingredients. Toss baked cauliflower with sauce. Return to oven 8-10 minutes until crispy and lacquered.
- Serve with hemp ranch and celery sticks.
