Hemp Buffalo Cauliflower Wings

Hemp-crusted cauliflower wings that crisp in the oven without deep frying. The hemp adds protein and crunch; the buffalo sauce makes them dangerously snackable.

Hemp Buffalo Cauliflower Wings

Yields 4 servings. Prep 15 minutes. Bake 30 minutes.

Ingredients

Wings:

  • 1 large head cauliflower, broken into florets
  • 1/2 cup all-purpose flour
  • 1/2 cup hemp hearts
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon salt
  • 2/3 cup milk
  • 2 tablespoons olive oil

Buffalo sauce:

  • 1/3 cup hot sauce (Frank's RedHot or similar)
  • 2 tablespoons melted butter
  • 1 tablespoon maple syrup
  • 1 teaspoon garlic powder

Method

  1. Heat oven to 220°C. Line a baking sheet with parchment.
  2. Whisk flour, half the hemp hearts, spices, salt, and milk into a smooth batter.
  3. In another bowl, mix remaining hemp hearts and panko.
  4. Dip each floret in batter, then roll in hemp-panko coating. Place on baking sheet.
  5. Drizzle with olive oil. Bake 20 minutes.
  6. Whisk buffalo sauce ingredients. Toss baked cauliflower with sauce. Return to oven 8-10 minutes until crispy and lacquered.
  7. Serve with hemp ranch and celery sticks.
