Hemp Berry Chia Pudding

A two-layer chia pudding with hemp hearts stirred into both the chia base and the berry compote on top. Make four jars on Sunday night and breakfast is sorted for the week.

Hemp Berry Chia Pudding

Yields 4 jars. Prep 10 minutes. Rest 4 hours or overnight.

Ingredients

Chia base:

  • 1/2 cup chia seeds
  • 1/4 cup hemp hearts
  • 2 cups milk (any kind)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Berry layer:

  • 2 cups mixed berries (fresh or frozen, thawed)
  • 1 tablespoon maple syrup
  • 1 tablespoon lemon juice
  • 2 tablespoons hemp hearts

Method

  1. Whisk chia base ingredients in a bowl. Whisk again after 5 minutes to prevent clumping. Refrigerate 4 hours or overnight.
  2. Mash berries lightly with maple syrup and lemon juice. Stir in hemp hearts.
  3. Layer chia pudding and berry mixture in jars. Refrigerate up to 4 days.
