Hemp Date Bites

Hemp Date Bites

No-bake date and hemp bites. Three ingredients minimum, infinite variations, hold together at room temperature. Made in a food processor in under five minutes.

Hemp Date Bites

Yields 14-16 bites. Prep 10 minutes. Chill 30 minutes.

Base recipe

  • 1 1/2 cups pitted Medjool dates (about 14 dates)
  • 1 cup raw nuts (almonds, cashews, walnuts, or pecans)
  • 1/2 cup hemp hearts
  • Pinch of salt
  • 2 tablespoons hemp hearts for coating

Method

  1. If dates are dry, soak in warm water 10 minutes, then drain and pat dry.
  2. Pulse nuts in food processor until coarsely chopped.
  3. Add dates, hemp hearts, salt. Process 60-90 seconds. The mixture should clump in your hand when squeezed.
  4. Roll into 1-inch balls. Roll in extra hemp hearts.
  5. Refrigerate 30 minutes to firm. Keep in a sealed container 2 weeks in the fridge, 3 months in the freezer.

Variations

  • Brownie: add 1/4 cup cocoa powder and 1 teaspoon vanilla.
  • Lemon coconut: add 1/4 cup shredded coconut, zest of 1 lemon, 1 tablespoon lemon juice.
  • Carrot cake: replace 1/2 cup nuts with 1/2 cup grated carrot (pat dry); add cinnamon, ginger, raisins.
  • Peanut butter cookie: use peanuts; add 1/4 cup peanut butter and 1/2 teaspoon vanilla.
